Winemaking and Maturation

 The Salty Tongues Syrah 2022 is a 100% Syrah red wine from vines located 25 kilometres from the cold Atlantic ocean, in Vredendal on the West Coast of South Africa.  The Label references the Rise of the West Coast as a new wine region and showcases divers picking grapes under the ocean, which contributes to the “salty” taste on the palate. They were cooled down before being destemmed. The next morning, 30% of the whole bunches were put into open fermenters. 

Fermentation started after three days of cold soaking and lasted for about two weeks, with pump-overs three times a day. The fermentation temperature was kept at 27⁰C. After fermentation, the wine was racked to one 500-litre. Ageing in barrel was done for 10 months. 

Bottled with the addition of a little sulphur, unfined and unfiltered. 

Tasting Notes:

Nose: graphite, red cherries, red meat, Kelp. The mouth feels intensely salty, with a dark cherry and saline finish.
