Winemaking and Maturation
Fermentation occurs in oak foudre, 500 French oak barrels, concrete eggs and stainless steel tanks. Regular battonage is employed to enhance the texture and volume in the wine. The wine is aged for a minimum of 10 months, blended and bottled for further ageing for at least six months.
