Les Horées

Les Horées is one of the most exciting new micro-domaines in Burgundy. Based in Beaune and founded by Catharina Sadde and her husband, Guilhem, the domaine has quickly developed a cult following for wines of striking aromatic purity, energy, and finesse.

Catharina’s path to Burgundy was far from conventional. Born in Germany, she first trained as a chef before moving into wine, studying viticulture and oenology and gaining experience at some of Burgundy’s most respected domaines – including the Domaine de la Romanée-Conti and Cecile Tremblay.

The domaine itself is tiny, with just over a hectare of vineyards spread across Beaune, Pommard and Volnay. Farming is organic and biodynamic in philosophy, with all vineyard work carried out by hand. In a region where scale and access are increasingly difficult, Les Horées is a reminder that some of Burgundy’s most compelling wines can come from very small, personal projects.

In the cellar, the approach is low-intervention. Fermentations are spontaneous, extraction is gentle, and élevage is handled with restraint. The wines are neither forced nor overly polished; they are shaped by fruit quality, careful farming and a clear desire to preserve perfume, texture and movement.

What defines Les Horées is delicacy without fragility. The reds are lifted, floral and finely textured, with supple tannins, vivid fruit and a sense of transparency that makes them immediately compelling. The whites are energetic, precise and mineral, carrying the same sense of quiet detail and natural balance.

Production is extremely limited, and demand has grown rapidly as Catharina Sadde has emerged as one of the most talked-about names in the new generation of Burgundy. This scarcity has led to significant secondary-market demand, but beyond their reputation, the wines remain grounded, expressive and handmade.
