Winemaking and Maturation

Temperature-controlled fermentation in concrete and stainless steel tanks. Combined with extended maceration for 20-30 days. Malolactic fermentation is carried out in stainless steel and concrete tanks. Aged in large Slavonian and French oak botti for 24 - 30 months.

Grape variety: Nebbiolo 100%.
Plots: located in different municipalities and blended together during winemaking.
Exposition: South-East, South, South-West.
Altitude: between 250 m.a.s.l. and 450 m.a.s.l.
Harvest: grapes are harvested by hand in plastic crates between mid-September and the end of October.
