Winemaking and Maturation
Two thirds whole bunch pressed while the last portion was given 24 hours skin contact prior to pressing. The juice was left to settle overnight before racking to old 400 & 500 litre french oak barrels. Fermentation occurred naturally and the wine was left on its gross lees for 10 months before blending and bottling. This wine is made without any added Sulphites.
Tasting Notes
Ultimately, the ocean and our cooler climate shine through with Kiwi fruit, green melon, a hint of blackcurrant and oyster shell on the nose while the palate is rich and broad with layers of flavour, coated acidity and a gently savoury finish.
