Winemaking and Maturation
Destemmed grapes, 15-day maceration and natural fermentation in tank, 22 months ageing in tank. Bottled unfined and unfiltered.
Tradition and international ambition blend together equally well in the wine cellar. All the domain’s wines are vinified naturally, with wild yeasts and no additives. Some of them get an old-fashioned elevage on old oak, possibly ”sous voile”, but they also like to work with 100% ageing in the tank. Almost all cuvées are bottled unfined and unfiltered, protected by a little bit of added sulphites.
Tasting Notes
Fun and vibrant Poulsard/Ploussard, low-extraction, high-concentration. Floral and spicy on the nose, the palate is packed with ripe but lightweight berry fruit. Lightly earthy and mineral-laced, refreshing finish.
