Domaine Génot-Boulanger began in Meursault in 1974. Today, Aude and Guillaume Lavollée farm 22 certified organic hectares across three Burgundy regions. In addition, gentle cellar work helps each wine show its vineyard clearly.

Vineyards

Les Vergers lies at mid-slope, north of Chassagne-Montrachet. Génot-Boulanger farms 0.70 hectares of east-facing Chardonnay there. Vines from 2004 grow on limestone and stony soil that shifts between marl and sand. In addition, nearby marble quarries add to the site's rocky character.

Winemaking and Maturation

First, the team picks the grapes by hand, crushes them lightly and presses the whole bunches. Then, fermentation starts in oak without an early sulphur addition. Next, the wine spends 12 months in barrel with about 10 to 15% new oak. The team then gives it six months in stainless steel. Finally, they bottle it without filtration.

Tasting Notes

Yellow fruit and clementine lead the mineral aroma. Then, white pepper, vanilla and light cream add depth. The palate feels broad and generous through the centre. However, firm acidity keeps the wine focused and fresh. Finally, ripe fruit and stony energy carry the long finish.
