Winemaking and Maturation
Harvesting everything by hand, the grapes are gently pressed in a pneumatic press before being transferred by gravity to cold settle in vats in the winery below.
Fermentation is done plot by plot.

A note from Damien and Coralie, “To further express the Amboise terroir, Clef de Sol is designed for ageing through ageing carried out entirely in barrels and the blend of grape varieties with an assertive character, typical of Touraine.”
