Winemaking and Maturation
48 hours skin contact.
Natural fermentation occurred in two old 500L French oak barrels. The wine was kept on the fine lees for another 8 months before bottling. It was bottle-aged for 14 months before releasing in January 2023.
Fresh quince aromas evolve into elderflower and perfume notes with a touch of flint. The natural acidity ensures a well-balanced palate which is linear and elegant with fruit-driven layers.
