Winemaking and Maturation

The team gently presses the grapes and ferments the juice with indigenous yeasts in stainless steel. The wine completes malolactic fermentation before its second fermentation in bottle. Extended ageing on the lees develops texture and complexity, while a low Extra Brut dosage preserves a dry finish. Production details
