Winemaking and Maturation

 The Salty Tongues Syrah 2022 is a 100% Syrah red wine from vines located 25 kilometres from the cold Atlantic ocean, in Vredendal on the West Coast of South Africa. 

The Label is a reference to the Rise of the West Coast as a new wine region and showcases divers picking grapes under the ocean, which contributes to the ‘’salty’’ taste on the palette. 

Grapes were picked early in the morning to preserve freshness. Cooled down before being destemmed. 30% whole bunches into open fermenters the next morning. 

Fermentation started after three days of cold soaking and lasted for about two weeks with pumpovers three times a day, fermentation temperature was kept at 27⁰C. After fermentation the wine was racked to one 500 litre and one 300litre barrel for aging. Aging in barrel was done for 9 months. 

Bottled with the addition of a little sulphur, unfined and unfiltered. 

Tasting Notes:

Nose: graphite, red cherries, red meat, Kelp. On the mouth there is an intense sensation of saltiness with a dark cherry and saline finish.
