Sakkie Mouton Sand Erf Vermentino 2023
Vineyards
100% Vermentino from a tiny vineyard up the West Coast on sandstone soils 15km from the Atlantic Ocean. A mere 390 bottles were produced.
Winemaking and Maturation
Grapes were hand-harvested early in the morning and cooled overnight. Whole bunch pressed the next morning and settled for twelve hours without any addition of enzymes. The clear juice is racked off and taken to 3rd and 4th fill 500L barrels and batch fermented in stainless steel.
Natural fermentation ensued for four weeks. After fermentation was completed the lees was regularly stirred once a week for four months.
Post-fermentation carried out over a period of eight months on the gross lees before being bottled unfined and unfiltered.
Tasting Notes:
Lifted aromas of lily, jasmine and bamboo. On the palate tight and linear, that is characteristically saline with Quince, Pear and Citrus. This wine is built to last with a lovely phenolic grip thus should only improve with age.
