Winemaking and Maturation
The inspiration for the name of Silverthorn Wines came from the Karroo Acacia tree and its white thorns – one of the Karoo’s most prolific thorn trees. Silverthorn focuses solely on producing Méthode Cap Classique (MCC) wines and is a member of the Cap Classique Association and the Cape Winemakers Guild. Located in Robertson, Western Cape, Silverthorn describes their rocky, lime-rich shale terroir as similar to the famous Champagne soils in France.
Tasting Notes
‘"I want it to be as full as possible, but not lose finesse", says John Loubser of this remarkable cuvée of Chardonnay and 30% Pinot Noir. Using barrel-fermentation on the former variety, with the addition of 15% reserve wine, this combines sourdough bread and hazelnut aromas with a palate of dried mushroom, citrus and patisserie. 2024-30’ – Tim Atkin MW, SA Special Report 2023
