Winemaking and Maturation
Everything under the Theo Dancer labels is done with a focus on low extraction and early picking. The wines are focused and precise. Likewise, minimal intervention techniques such as natural primary and malolactic fermentations, neutral vessels for ageing and very low sulphur additions, are all part of the DNA of these personal wines.
Vinification in used 456L barrels, whole-bunch, not temp controlled, no pumping over.
Both the Theo Dancer and Roc Breïa wines are labelled as Vin de France. They are brought back and vinified in the family cellars in Chassagne.
Tasting Notes
The Theo Dancer Grenache is charming and powerful, a great balance between elegant, restrained and full-bodied power. Aromas of red berries, plums, rose petals and orange rind. Medium-bodied, open and supple, with melting tannins and a lively, succulent profile, it will drink well on release and for 10 years or more.
