Tim Hillock Paradiso Syrah 2021
Vineyards
70% comes from a cooler site on the Paardeberg (granite soils) and the rest from around the Kasteelberg mountain (iron and schist soils). The vineyards are in their early 20’s.
Winemaking and Maturation
Hand harvested at dawn into small crates and put in the cold room for a few hours. 100% whole-bunches got foot- stomped to release some juice and allowed to ferment naturally in a concrete tank.
Tasting Notes
“Dark berries, lavender, earth, pepper and spice while the palate has good depth, bright acidy and firm tannins. Full bodied and flavourful with a nicely dry finish.” – Christian Eedes
Technical Details
10 months in a 2550L Stockinger foudre and three 300L oak barrels.
Composition: 95% Syrah; 5% Grenache
