Tim Hillock Ceres Plateau Pinot Noir 2021
Vineyards
The grapes come from a single vineyard in the Koue Bokkeveld (translatation: Cold Buck Shrubland). The vineyard is situated at 860m above sea level on shale soils.
Winemaking and Maturation
Hand harvested at dawn into small crates. Whole-bunches (30%) were foot-stomped in an open top tank and the rest destemmed on top. The destemmed portion also got a light foot-stomp to release some juice and natural fermentation followed.
Tasting Notes
“Red berries, fynbos, cured meat and white pepper on the nose while the palate is light and refreshing with low tannins.” – Christian Eedes
