Tim Hillock Rooi Red Blend 2021
Vineyards
All but the Tinta Barocca come from schist soils around the Kasteelberg mountains (82% of the blend). The Tinta Barocca is a 1962 block on the Paardeberg and is predominately granite soils.
Winemaking and Maturation
All components were harvested and vinified separately. All fermented naturally and the blend’s total whole-bunch component is 50%.
Maturation:
50% of the blend aged in old 300L barrels and the other
50% aged in unlined concrete for 10 months.
