Pattes Loups
Domaine Pattes Loup has quickly become one of the standout names from Chablis, bringing a fresh and exciting approach to this historic region. Founded by Thomas Pico in 2005, the estate is based in Courgis, just outside the village of Chablis. Pico’s journey began with 2.4 hectares of family vines. Determined to break away from tradition and elevate the quality, Pico defied his father’s expectations by implementing strict yield controls and transitioning to organic farming—an uncommon but courageous choice in Chablis, where vine-growing conditions can be notoriously tricky.
Over time, Pico has expanded the estate to 15 hectares, all farmed organically with great care. Many of the vineyards were originally planted by his grandfather through selection massale, particularly in the high-altitude areas around Courgis and Preys, which reach up to 300 meters. Pico also employs innovative practices like rotating cover crops to combat erosion, retain water, and enhance soil health.
One of the hallmarks of Domaine Pattes Loup is Pico’s dedication to hand-harvesting, followed by meticulous sorting of grapes on a vibrating triage table. Fermentation occurs with Indigenous yeasts, and Pico is known for extended ageing (élèvage), with some wines maturing for up to 48 months. This extended ageing process adds depth, texture, and complexity to his wines, setting them apart from typical Chablis offerings. All wines are bottled without fining or filtration, maintaining their natural purity.
The estate’s Chablis Village is made from vines over 60 years old and aged in a combination of concrete eggs, neutral barrels, and stainless steel. Premier Crus like Côte de Jouan, Beauregard, and Butteaux (within Montmains) are sourced from hillside vineyards aged between 30 and 60 years old and spend a year in oak, followed by two years in tanks or concrete vats.
Despite being a relatively young winemaker, Pico has earned a reputation for his wisdom and instinct, often drawing comparisons to icons like Anselme Selosse. His wines are a true expression of Chablis, though they offer more than the classic pairing of oysters. They are complex, layered wines that reveal their full character with time in the glass. With vibrant minerality and vinous complexity, the wines of Domaine Pattes Loup embody the essence of Pico’s careful vineyard work and minimalist approach in the cellar, offering a deep sense of vitality and structure.
