Domaine Paul Pillot is one of the Côte de Beaune’s most compelling addresses. Under the direction of Thierry Pillot, the domaine has become a reference for purity, precision, and transparency.
The family’s holdings span an enviable range of village and Premier Cru vineyards – Les Caillerets, Clos Saint-Jean, La Romanée, and others – each site articulated with remarkable clarity. Farming is meticulous and thoughtful, and guided by sustainability.
In the cellar, the philosophy is one of minimal intervention. Gentle pressing, fermentations with indigenous yeasts, and long élevage (with a restrained hand on new oak – maximum 20%) allow the vineyards to speak without embellishment. The wines are all about nuance.
What defines Paul Pillot is purity and balance. Whites that combine tension and depth, and reds that are refined and finely textured. There is concentration, certainly, but never weight.
Production remains limited. Allocations are increasingly difficult to secure. Yet the wines retain an honesty and composure that feels rooted in Chassagne’s classical tradition.
