50% Chardonnay planted on sandstone and lime, 50% Pinotage on Koffieklip. The elevated Stanford Foothills at the base of the Klein River Mountain is exposed to the full force of both the South Easter and Westerly winds which carry icy and salty air off the ocean. These cooler growing conditions are perfect for sparkling wine.
Méthode Ancestrale, more commonly known as Pét Nat is the Ancient Method of making sparkling wine - a single fermentation, in bottle. This requires us to be incredibly vigilant (and loving) during the fermentation process and bottle at just the right time to ensure we end up with just the right amount of bubbles.
