Jacky Blot acquired Domaine de la Butte in Bourgueil in 2002. Today, Jean-Philippe Blot leads the estate and farms its Cabernet Franc organically. The south-facing hillside contains several layers of limestone and clay. Therefore, the domaine bottles each part of the slope separately to show its different structure and freshness.

Vineyards

Le Haut de la Butte comes from the upper part of a south-facing hillside in Bourgueil. Cabernet Franc vines more than 35 years old grow in clay and flint over limestone. The high position stays cooler than the lower slope. Therefore, the fruit keeps fresh acidity while the sunny aspect supports full ripeness.

Winemaking and Maturation

First, the team picks the certified organic grapes by hand and removes the stems. Then, native yeasts run the fermentation with gentle extraction. The domaine uses cement and older barrels rather than strong new oak. As a result, the fruit and mineral character remain clear. Finally, the team bottles the wine without fining or filtration.

Tasting Notes

Wild red berries, blackcurrant and hibiscus lead the aroma. Then, black pepper, mint and a light smoky note add depth. The palate feels juicy and lively, with fine, powdery tannins. Meanwhile, fresh acidity keeps the dark fruit bright. Finally, the finish returns to cassis, herbs and cool stone.
