Jacky Blot founded Domaine de la Taille aux Loups in Montlouis in 1988. Today, his son Jean-Philippe leads the estate and continues its focus on dry, site-specific Chenin Blanc. The team farms organically and picks by hand. In the cellar, native yeasts and careful barrel work help each vineyard show its own character.

Vineyards

Clos de la Bretonnière is a four-hectare walled site in Noizay, within the Vouvray vineyard area. The south-east-facing Chenin Blanc grows in fine clay directly over limestone. This shallow soil gives the wine strong mineral energy. However, the bottle carries Vin de France because the domaine makes the wine in Montlouis.

Winemaking and Maturation

First, the team picks the organic fruit by hand. Then, native yeasts start the fermentation in barrel. The wine avoids malolactic fermentation, so it keeps its firm acidity. Next, the team matures it in barrels, using about 20% new oak and older wood for the rest. Finally, the long rest on the lees builds texture while preserving freshness.

Tasting Notes

Citron and mandarin lead the aroma, followed by flowers, chalk and white pepper. The palate feels pure and energetic, with a firm mineral line. In addition, a smooth texture adds weight without heaviness. Meanwhile, bright acidity keeps the citrus fruit clear. Finally, the finish feels creamy, mouth-watering and long.
