Jacky Blot founded Domaine de la Taille aux Loups in Montlouis in 1988. Today, his son Jean-Philippe leads the estate and continues its focus on dry, site-specific Chenin Blanc. The team farms organically and picks by hand. In the cellar, native yeasts and careful barrel work help each vineyard show its own character.

Vineyards

Clos de Mosny is a south-facing, walled vineyard in Montlouis-sur-Loire. Chenin Blanc vines aged about 40 to 50 years grow in sand and clay with plenty of flint. Pure limestone lies only two to three metres below the surface. As a result, the site gives the wine both rounded texture and a firm mineral line.

Winemaking and Maturation

First, the team picks the certified organic fruit by hand. Then, native yeasts start the fermentation in barrel. The wine does not undergo malolactic fermentation, so it keeps its natural acidity. Next, the team matures it in barrels, using about 20% new oak and older wood for the balance. Finally, light filtration protects the wine's clarity without removing its texture.

Tasting Notes

The 2024 opens with apple, white flowers and a light flinty smoke. Then, lemon, ginger and soft oak spice add detail. The palate feels broad and smooth, yet fresh acidity keeps it precise. Meanwhile, oyster-shell and chalk notes bring a savoury edge. Finally, the long finish turns salty, bright and gently spicy.
