These Vineyards were planted on Table Mountain Sandstone just outside of Citrusdal on a 600-meter slope.

Winemaking and Maturation

The Gerookte Snoek Red is a single vineyard bottling of the Grenache mutation Garnacha Peluda or Lledoner Pelut. It’s othername is hairy Grenache because of the hairs on the bottom of it’sleaves.

The grapes were picked early in the morning to preserve freshness, then cooled down, before 70% were destemmed and 30% whole bunches added to an open-top fermenter to start wild fermentation.

After three weeks of fermentation, the grapes were pressed with a basket press to two 228-litre Burgundian barrels to finish fermentation.

Malolactic fermentation naturally occurred, and the wine was left on the gross lees after malo to age for 12 months. Bottled with the addition of a small amount of sulphur.

Tasting Notes:

Nose: Red fruits predominantly with a side note of pepper spice from the stems.

Palate: Lots of red fruits ranging from cherries to strawberries.
