Vineyards

Duncan selects fruit from vineyards in Stellenbosch, the Overberg and Villiersdorp. Sandstone and granite soils give the wine structure, clarity and a distinct mineral character. Cool conditions help the grapes retain fresh acidity and clean fruit flavours. Each vineyard adds a different layer to the final blend.

Winemaking and Maturation

The team whole-bunch presses the grapes and handles the juice with minimal intervention. Fermentation takes place in 500-litre French oak barrels and concrete eggs. The wine then rests on its lees to gain texture and complexity.

Careful oak use supports the fruit without adding strong wood flavours. These methods create a focused wine with both richness and freshness.

Tasting Notes

At first, Savage White 2025 shows flint, grapefruit and fresh pear. Time in the glass reveals white peach, elderflower and a touch of blackcurrant leaf.

The palate feels silky, bright and balanced. Citrus peel, stone fruit and savoury herbs lead into a dry, saline finish. The wine drinks well now, although careful cellaring will add further depth.
