Tim Hillock’s 2021 Pinot Noir grapes come from a single vineyard in the Koue Bokkeveld (translatation: Cold Buck Shrubland). The vineyard is situated at 860m above sea level on shale soils.

Hand harvested at dawn into small crates. Whole-bunches (30%) were foot-stomped in an open top tank and the rest destemmed on top. The destemmed portion also got a light foot-stomp to release some juice and natural fermentation followed.
