Winemaking and Maturation
Since 2008, Guillaume and Aude have worked painstakingly to improve the quality of their wines, converting to organic farming practices and experimenting with biodynamics. The domaine’s philosophy is “maximum work in the vineyards for minimum intervention in the cuverie.” This has translated to wines that are first and foremost true to their terroir.
Tasting Notes
Great precision on the nose. Brilliant crystalline fruit, fine grained despite having quite a presence and punch to it. Lemon flesh, fine salt, plenty of fresh acidity. A very pleasing extract on the finish which gives bite and shape.
Clos du Cromin is a vineyard that works particularly well in warm, dry vintages because of the clay content in the soil, and then after about 40cm you hit the mother rock, adding a balancing sense of complexity to the naturally full, open-knit fruit that characterises this wine.
