product description

Pascal Doquet Diapason Grand Cru Blanc de Blancs NV

Vineyards

Le Mesnil-sur-Oger, Côte des Blancs, Champagne, France. Pascal Doquet’s Grand Cru Chardonnay vineyards grow on chalk soils in this celebrated village. Old vines form an important part of the estate’s holdings. Vineyard details

Winemaking and Maturation

Pascal uses indigenous yeasts for fermentation and works with older oak barrels and enamelled tanks. Malolactic fermentation rounds the texture, while reserve wines add depth to the blend. Extended ageing on the lees develops complexity before disgorgement. Production details

Tasting Notes

Citrus zest, ginger and anise lead an expressive bouquet, with subtle woody spice adding another layer. The palate combines richness with a firm line of freshness. A precise finish gives focus to the wine’s depth and spicy character.
