product description

Pascal Doquet Champs Libres Premier Cru Extra Brut NV

Vineyards

Côte des Blancs, Champagne, France. Premier Cru vineyards in Vertus and Bergères-lès-Vertus supply Pinot Noir and Chardonnay. Pascal combines estate fruit with grapes from growers who follow his farming standards. Vineyard details

Winemaking and Maturation

Pascal blends Pinot Noir and Chardonnay to bring together depth, freshness and structure. Indigenous yeasts drive fermentation, and the wine completes malolactic fermentation. Reserve wine adds complexity to the blend, while lees ageing develops texture. A low dosage maintains the cuvée’s dry Extra Brut style. Production details

Tasting Notes

Ripe orchard fruit, white flowers and honeycomb introduce a generous palate. Bright acidity balances the richness, while a chalky texture adds definition. A savoury finish brings a gentle grip and lingering freshness.
