Winemaking and Maturation
Everything under the Dancer label is done with a focus on low extraction and early picking. The wines are focused and precise. Likewise, minimal intervention techniques such as natural primary and malolactic fermentations, neutral vessels for ageing and very low sulphur additions are all part of the DNA of these personal wines.
Vinification in used 456L barrels, not temp controlled, no pumping over.

"From vines planted in 2019, 2020 and 2021 with high-quality selections of Chardonnay, Dancer's 2023 Bourgogne Hautes-Côtes de Beaune Blanc delivers aromas of pear, white flowers and fresh mint, followed by a medium to full-bodied, satiny and incisive palate with good texture and cut, concluding with a gently aromatic finish."
